Chimay Grand Reserve ( Belgium )

Chimay Grand Reserveis principally distinguished by its strong character. It begins with a pleasant aroma of fresh yeast with a light, flowery rosy touch . Tasting only accentuates the pleasant sensations perceived in the aroma, while revealing a light but pleasant touch of roasted malt. This top fermented Trappist beer , refermented in the bottle, is not pasteurised.

Chimay is the best known and best selling label among the Belgian Trappist Ales. The beers are brewed at the Abbaaye de Notre-Dame, located on a hillside close to a town of the same name, within walking distance of the French border. The abbey was built around 1850 and the brewery added a decade later. It has a history of taking beer production very seriously and was the first to use the "Trappist Beer" designation. After World War II the legendary brewing scientist Jean De Clerck was a major factor in re-establishing the brewery.
