Chimay Red ( Belgium )

Chimay Red it is noted for its coppery color and creamy head. It has a light, fruity apricot aroma produced by the fermentation and thoseĀ nuancesĀ are confirmed upon first taste and enhanced by a light touch of bitterness. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Chimay is the best known and best selling label among the Belgian Trappist Ales. The beers are brewed at the Abbaaye de Notre-Dame, located on a hillside close to a town of the same name, within walking distance of the French border. The abbey was built around 1850 and the brewery added a decade later. It has a history of taking beer production very seriously and was the first to use the "Trappist Beer" designation. After World War II the legendary brewing scientist Jean De Clerck was a major factor in re-establishing the brewery.
